In our own words… a bit about who we are:
Charles Kimball
Having been in the service industry since sixteen, I know guest
satisfaction is the ultimate goal. My years of expertise have been in
fine wines, gourmet food and event management from four to four hundred
guests.
My portfolio includes working on presidential campaigns in
New Hampshire to weddings in a beautifully restored barn in
Sonoma with two rented Clydesdale horses standing at the entrance - just
for effect! I spent ten years with Chaminade in Santa Cruz,
an exclusive executive conference center high on the hill over looking
Monterey Bay. Duties there ranged from managing a fine dining room to
Team Building Workshops for companies that were looking to bond their
employees with trust and a better understanding of each other.
When dealing with corporate clients with the goal of improving your
bottom line and interpersonal relationships, we ensure your time and
money is well spent and produces results.
World travel is my personal passion. From my own experience I
understand time away from work and the stresses of daily life should be
full of a wonderful blend of relaxation, sumptuous food, fine wine,
invigorating conversation, reinvigorating activities and lessons in
life. This is what we offer at "Undiscovered."
The last several years of my life has centered around living in the
finest wine region in America. I have made many good friends and have
built professional relationships with numerous people in these two
beautiful valleys, from wait-staff in the finest restaurants to the
owners of the most famous and prestigious vineyards in
Napa and Sonoma. I work in partnership with Melissa Teaff
Catering of
Napa. Together, we can guarantee your wine and dining
experience - from the finest wine cave in which to enjoy a
once-in-a-lifetime dinner to the most beautiful wineries and vistas
Napa and Sonoma have to offer. With Melissa Teaff Catering we
ensure you will have access to the best locations for your private
events. Through my years of working with the restaurant Press
in
St. Helena I have developed relationships with winery owners and
wine makers that only occur with the one-on-one relationship built by
serving fine food and fine wine daily. Every night of the week we serve
the "Royalty of Napa Valley." These winery owners, winemakers and the
movers-and-shakers all have shared with us their favorite “undiscovered”
secrets of
Napa and Sonoma Valleys. Now their world can be yours!
Another of my passions of is gourmet food.
Napa and Sonoma wine country is brimming with restaurateurs
proving that they have the best the world has to offer. We know where
the locals dine on the most sumptuous cuisine, where the “rich and
famous” find their gourmand experiences, and where you will enjoy some
of the finest food and wine pairings found anywhere.
Now, let me introduce you to my good friend and colleague, Danaii,
who has been born and raised in Napa Valley, a true native who knows all the
secret and undiscovered magic of the valleys. Her perspective on the
Napa and Sonoma experience, as only a native can offer, is
one-of-a-kind.

In my thirty years of living here in Napa I have had the opportunity to work with
fine dining restaurants and also some of the best wineries. My career has
centered on helping guests get the best experience that this valley has to
offer.
In working with Undiscovered Napa I will ensure that you and your guests
get the chance to explore both the elegant and casual sides of wine country.
Some of my best friends are private chefs that can create fine meals for four or
forty, in a cave or overlooking the valley. What we are offering is our
knowledge of undiscovered sides of this valley. Let me help you design a getaway
that gives you moments to remember.
After consulting with our guests we can help you decide if you want a
quaint bed and breakfast or one of Napa's premier hotels. Do you want to stay
with our friends on their winery and horse ranch? We have private homes
available for two days or a week . Do you want to hike thru a redwood forest and
have lunch under a four hundred year old tree?
Our goal is to dispel the myths and intimidation that can follow wine tasting,
to help you better understand and enjoy wine, including what you like and why.
